Vanilla Cake…. Yes, please!

 

Ok, Idk about you guys but I love a good dessert. Due to some dietary restrictions right now (Basically Paleo/Whole 30- Including no dairy, no soy, no sugar, no potatoes) there aren’t many options out there for me. Fat bombs have been my go-to…This falls in line and is pretty close to one. In one of our recent weekly trips to Whole Foods, I saw the new RX Nut Butters and decided to take a peek at the ingredients and see if it would be in my wheel house. Sure enough, it was!! There is a 1/2 date in there, so technically there is some sugar, but not much and it’s more natural than a processed sugar.. Ok, maybe I’m pushing my no processed food a little bit but a girls got to live a little…

Back to this deliciousness… this Vanilla Almond Butter will remind you of a smooth creamy slice of vanilla cake. My packet was a little warm from being the the car most of the day. It made it’s way on a road trip with us and by the time I remembered I had it in the car, most of the day had gone by. Lucky for me, this didn’t hinder the taste and removed the need to squeeze and soften the almond butter. At first taste, I knew this was something I was definitely going to be hooked on. The only way to truly describe it is as a delicious moist piece of vanilla cake. The kind of cake that you actually want to go back for second and don’t need to feel guilty for! Carnitas Paleo Bowl

 

Super simple put together meal in less than 10 minutes! My kind of weeknight meal! So good I had to share…  We made our favorite carnitas recipe  courtesy of 40Aprons, this recipe has quickly become a staple in our house. We’ve even made it for a party, super simple and delicious!!  We typically make enough that we have leftover meat for at least 2-3 days!! (Yay us!!) Ok, now back to tonights meal… Our base is Trader Joe’s riced broccoli, topped with some shredded red cabbage, carnitas, guacamole, (tonights was store bought from Whole Foods- always make sure you read your ingredients they like to sneak sugar and preservatives in there if you aren’t careful), homemade cashew “sour cream” and chives! You can also top it with your favorite salsa! We enjoyed as is!

I had a ton of questions regarding our cashew sour cream… This is a MUST try if you’re dairy free!! It’s SUPER easy to make too!!

Ingredients 

  • 1 1/2 cups raw cashews,
  • 1/2 cup of water
  • 2 tbsp of apple cider vinegar
  • 2 tbsp lemon juice
  • 1 tsp salt

Instructions

Measure out your 1 1/2 cup of raw cashews and put in a glass container with room for water. (You only need about an inch or two above your cashews) Boil a pan of water approximately 2 cups. Once your water is boiling, pour your boiling water over your raw cashews to cover and let sit for 10 minutes.

Drain your cashews and transfer to a nutribullet or blender. Add remaining ingredients. Blend. Enjoy!
