Carnitas Paleo Bowl


Super simple put together meal in less than 10 minutes! My kind of weeknight meal! So good I had to share…  We made our favorite carnitas recipe  courtesy of 40Aprons, this recipe has quickly become a staple in our house. We’ve even made it for a party, super simple and delicious!!  We typically make enough that we have leftover meat for at least 2-3 days!! (Yay us!!) Ok, now back to tonights meal… Our base is Trader Joe’s riced broccoli, topped with some shredded red cabbage, carnitas, guacamole, (tonights was store bought from Whole Foods- always make sure you read your ingredients they like to sneak sugar and preservatives in there if you aren’t careful), homemade cashew “sour cream” and chives! You can also top it with your favorite salsa! We enjoyed as is!

I had a ton of questions regarding our cashew sour cream… This is a MUST try if you’re dairy free!! It’s SUPER easy to make too!!


  • 1 1/2 cups raw cashews,
  • 1/2 cup of water
  • 2 tbsp of apple cider vinegar
  • 2 tbsp lemon juice
  • 1 tsp salt


Measure out your 1 1/2 cup of raw cashews and put in a glass container with room for water. (You only need about an inch or two above your cashews) Boil a pan of water approximately 2 cups. Once your water is boiling, pour your boiling water over your raw cashews to cover and let sit for 10 minutes.

Drain your cashews and transfer to a nutribullet or blender. Add remaining ingredients. Blend. Enjoy!
