Vanilla Cake…. Yes, please!

Ok, Idk about you guys but I love a good dessert. Due to some dietary restrictions right now (Basically Paleo/Whole 30- Including no dairy, no soy, no sugar, no potatoes) there aren’t many options out there for me. Fat bombs have been my go-to…This falls in line and is pretty close to one. In one of our recent weekly trips to Whole Foods, I saw the new RX Nut Butters and decided to take a peek at the ingredients and see if it would be in my wheel house. Sure enough, it was!! There is a 1/2 date in there, so technically there is some sugar, but not much and it’s more natural than a processed sugar.. Ok, maybe I’m pushing my no processed food a little bit but a girls got to live a little…

Back to this deliciousness… this Vanilla Almond Butter will remind you of a smooth creamy slice of vanilla cake. My packet was a little warm from being the the car most of the day. It made it’s way on a road trip with us and by the time I remembered I had it in the car, most of the day had gone by. Lucky for me, this didn’t hinder the taste and removed the need to squeeze and soften the almond butter. At first taste, I knew this was something I was definitely going to be hooked on. The only way to truly describe it is as a delicious moist piece of vanilla cake. The kind of cake that you actually want to go back for second and don’t need to feel guilty for! Try it out and let me know what you guys think! (Remember vanilla cake when you try it!)

Winter Cold

So Cal definitely has been cold MUCH longer than what we’re used to. I’m taking advantage of the weather and bringing out all my sweaters… Cashmere is my bestie in weather like this, I don’t do well in the cold, so base layers or layering up is definitely ideal for me.. These Sorel boots have been a life saver with all the rain this year too! Cute enough to wear out and about for work even! Styled with a nice pair of black jeans and cute top/sweater!

Carnitas Paleo Bowl

Super simple put together meal in less than 10 minutes! My kind of weeknight meal! So good I had to share…  We made our favorite carnitas recipe  courtesy of 40Aprons, this recipe has quickly become a staple in our house. We’ve even made it for a party, super simple and delicious!!  We typically make enough that we have leftover meat for at least 2-3 days!! (Yay us!!) Ok, now back to tonights meal… Our base is Trader Joe’s riced broccoli, topped with some shredded red cabbage, carnitas, guacamole, (tonights was store bought from Whole Foods- always make sure you read your ingredients they like to sneak sugar and preservatives in there if you aren’t careful), homemade cashew “sour cream” and chives! You can also top it with your favorite salsa! We enjoyed as is!

I had a ton of questions regarding our cashew sour cream… This is a MUST try if you’re dairy free!! It’s SUPER easy to make too!!

  • 1 1/2 cups raw cashews,
  • 1/2 cup of water
  • 2 tbsp of apple cider vinegar
  • 2 tbsp lemon juice
  • 1 tsp salt

Measure out your 1 1/2 cup of raw cashews and put in a glass container with room for water. (You only need about an inch or two above your cashews) Boil a pan of water approximately 2 cups. Once your water is boiling, pour your boiling water over your raw cashews to cover and let sit for 10 minutes.

Drain your cashews and transfer to a nutribullet or blender. Add remaining ingredients. Blend. Enjoy!

Meditation- Om

Yoga Mat: Manduka Bolster: BrentwoodHome Meditation Pillow: BrentwoodHome Diffuser: Vitruvi

One of my goals for 2019 is to work on my head game… my mindset. One of the ways that I’m working to accomplish this is through meditation and yoga. (Routinely I do a HITT or Crossfit WOD- StreetParking)  I’m a newbie to meditation and dedicated to working on this to discover how it can help me handle and reduce stress. So, I decided I needed to create a space that would be welcoming and encouraging for me to practice daily. I’m definitely the girl that buys the cute workout clothes to help with the motivation.  So, of course I would need some essentials for this…after doing a little bit of research and looking at reviews I purchased this meditation pillow and yoga bolster from BrentwoodHome, they had a ton of good reviews! The meditation pillow and bolster have a beautiful cover (it also matches my home, added bonus) and are filled with corn husks and cotton- they’re also don’t contain any of the bad stuff; formaldehydes, phthalates, heavy metals, all the stuff you would hope to not see. (and we really try and keep out of our house)  I pulled out my yoga mat that my fiancé purchased for me a few years ago- Manduka mats have a lifetime warranty- you can’t beat that!! and purchased a diffuser. This black stone beauty is small but powerful, I’m testing out different oil mixes but definitely loving the ambiance it helps create. I’m going to look at getting a few candles to light as well. And for the most important aspect, of actually meditating…  I’m officially on day 23 using headspace, which is a fantastic app to get started and keep you going meditating. I have a lot of work still ahead of me- 10 minutes can be quite tough for me, but I figure 10 minutes of me time is not something to shy away from. Do you meditate? When do you find the best time to meditate is? Any suggestions or tips?

Happy Wednesday! Hump day is here- (I’ve always disliked that saying, idk why??) This week went by pretty fast with the memorial holiday… I did Murph on Monday in honor of all our service men/women and a dear friends dad whom just passed away last month. Murph is a mile run, 100 pull ups, 200 push ups and 300 air squats (it kicked my bootie, and yes I’m sore) oh and then another mile run… I did cheat a little and I did it as a team/partner wod and split it with my bf! (cheers to all those who rocked it alone!) It’s not June but the gloom is here, so I’m staying bundled up but able to peel the layers off,  I love this outfit- the army green puffer vest goes with almost anything and everything… Green and bright orange or an amazing combo in my book… I’m also gushing over these amazing wedges- the pics really don’t do enough justice- go check them out!!

I love it to run around and visit clients in, getting in and out of my car without any fuss… I added my leather jacket for an extra layer- it looks sunny, but the clouds rolled in quick making it a chilly day!
